Cooking Class in Biho-Greenteria restaurant

  Have you ever heard about the cooking class in Biho-Greenteria restaurant? That cooking class started for the first time for dormitory residents from the 8th of November to the 17th of November. It proceeded 4 times for 2 weeks. The cooking class was run on Tuesdays and Thursdays, and the number of students to be admitted was 20. The cooking class time was from 7p.m. to 9p.m. The cooking place is Biho-Greenteria restaurant. Its guidelines for setting up and the application form were posted on the homepage of 'Biho-living hall'.

 

  I first heard news about this cooking class from my friend, so I applied with my roommate. The cooking class was composed of a cook's public cooking demonstration and students' cooking. After we cooked the dish, we could eat the food we made on the spot or wrap it up and take it home.

 

  Cooking class starts with the manager handing a recipe out to students who take the class. A cook shows how to make the main dish while giving an explanation. The students see the recipe with the demonstration. After the cooking rehearsal, the students cook by themselves by referring to the recipe. When the students go to the Biho-Greenteria restaurant punctually at 7p.m the cooking material preparation is done, so we can start cooking directly after the demonstration. On the first day we made 'Chicken Doria' and 'Blue-lemonade'. The second day was 'Pepero'. On the third day we made 'Cream Spaghetti' and 'Hamburger'. The fourth day menu was 'Tortilla Pizza' and 'Stir-fried Rice Cake'.

 

  I wondered how this cooking class was made for the first time at 'Biho-living hall', so I interviewed the person who devised this project.

 

Hye-rim: Hello! Nice to meet you.

Yun-mi Huh: Hello! Nice to meet you, too.

 

Hye-rim: Introduce yourself please.

Yun-mi: Hello! My name is 'Yun-mi Huh'. I am a manager at Biho-Greenteria restaurant in Daegu University.

 

Hye-rim: How did you devise this cooking class?

Yun-mi: When I communicated with the administration chief of Biho-living hall, we looked for a way how we could give some help to the residents of the dormitory. We thought of a way to provide a cooking class to the dormitory residents. By participating in the cooking class, residents can know how to cook a dish and make it easily in their dormitory kitchen when they want to eat. I began planning the cooking class with my company fellow workers.

 

Hye-rim: What was difficult when you planned the cooking class?

Yun-mi: I had doubts if enough residents of the dormitory would apply for this cooking class, and I worried about what kind of food I and my fellow workers would teach. I thought seriously about 'What kind of menu will be the most helpful to them?' Luckily when we recruited participations, many residents of the dormitory applied. The responses about the 'Chicken Doria' dish we taught on the first day were also very good, so I was very happy and moved by the students of the cooking class.

 

Hye-rim: How did you prepare this cooking class?

Yun-mi: First, my fellow workers and I had to decide on the main menu. Next, we bought the cooking materials using our restaurant system or external markets. After that, a nutritionist determined the amount of each cooking materials and the main cook rehearsed to make the dish. They then tasted the food and revised their method. In the middle of cooking, they had to take pictures to use in the recipe paper later. We then made the recipe paper to give to the students, and prepared 20 students' materials for one person. Finally, we greeted the cooking class students.

 

Hye-rim: Why did you made only 4 cooking classes for the 2 weeks?

Yun-mi: This was the first time we made the cooking class in Biho-Greenteria restaurant at Biho-living hall, so we were not entirely sure what to plan. The students who took the cooking class this time said to us that they felt disappointed with only 4 classes. If we have a chance to make this cooking class again, we will consider increasing the amount of classes.

 

Hye-rim: How was the participations' satisfaction with the cooking class?

Yun-mi: We made a survey paper and conducted the survey using it to check the students' satisfaction. The questions were 'Were you satisfied with today's main menu?', 'Did you understand the recipe easily?' and so on. Most of the results gave us a very high score, but one thing we got some relatively low scores on was the time of starting the cooking class. We considered the finishing time of students' classes and our restaurants' running time and planned to start the cooking class at 7p.m. Unfortunately it was late for students after they cooked and ate their dishes. It is a matter I will have to sleep on some more.

 

Hye-rim: Could you show an example of one of the cooking class recipes for the L.L.F readers?

Yun-mi: Sure.

The main dish is 'Cream Spaghetti'. The ingredients of this dish are: spaghetti noodles, milk, whipping cream, onion, bacon, broccoli, crushed garlic, chicken soup, salt, and pepper.

This is the method of cooking Cream Spaghetti. First, please prepare the materials. Cut the onion, bacon, broccoli into chunks. Second, add 4 tablespoons of oil to a skillet. After that, put in some crushed garlic and bacon and fry it. Third, put the onion and broccoli together and fry it. Fourth, mix the milk and whipping cream at a ratio of 3 to 2. Pour the mixture and the chicken soup into the frying pan. Fifth, add some salt and pepper to suit your taste. Sixth, add the spaghetti noodles and boil it until the noodles are cooked. Finally, put the cream spaghetti in a concave bowl. It is done.

 

Hye-rim: Finally, what do you want to say to Daegu University students?

Yun-mi: As a manager of the cooking class, I want to thank the recent cooking class students, because all of them followed the plan that I set out really well. If they want to participate in a program like this again, please make a request to the administration office of Biho-living hall.

As a manager of Biho-Greenteria restaurant, we always think about the Daegu University students' menu. We are always trying to develop our restaurant's menu and invent new ones. Please become more interested in our restaurant and visit Biho-Greenteria restaurant.

  Through this interview, I got to know more about the cooking class. As a participant of this cooking class, I was satisfied because I did not have any experience with cooking excluding noodles, steamed egg or fried eggs. I got the chance to cook some dishes and gained some courage with cooking by participating in this class. If the cooking class runs one more time or forward on a continuing basis, I want to recommend residents of the dormitory to join me one more time.
