Korean Traditional Food and Gimjang Culture

 

 When the weather starts beginning to get cold from November in Korea, many people eat some new Kimchi with boiled pork. This often occurs after making Kimchi called to prepare for winter, called Gimjang. The spirit of working together is included in the notion of Gimjang. Cooperation is one of the most representative values in Korea. Therefore, on November, 05, 2017 the government designated this activity as National Intangible Cultural Asset NO.133

 National Intangible Cultural Assets fall into several different categories. The government gives the honor to people who have a significant historical or artistic ability or something that serves a cultural function. Thus, the people acknowledged for their talents can transfer them to the next generation by teaching successors. The Gimjang culture was already designated as a UNESCO Intangible Cultural Heritage of Humanity in 2012. The national designation recognized a wider spectrum of Gimjang culture than the UNESCO designation.

 The national intangible cultural asset recognizes the uniqueness of local customs, which differentiates it from UNESCO. The basic way to make Kimchi involves Chinese cabbages or radishes that are soaked in salty water. A few minutes later, they are fished out, and people make a red sauce consisting of red pepper powder, gingers, green onions and garlics. Finally, the red sauce is mixed with the salted cabbages and they are set aside to ferment. The flavor of Kimchi made in different regions is really different. For example, Kimchi made in Gangwon- do Province contains more seafood because they are located near the ocean, the eastern coast of Korea and the western coast.

Eating Kimchi helps people’s digestion because it is a fermented food and there is a bunch of lactobacillus. Additionally, it blocks bad germs and decreases cholesterol and excessive body fat. The Korean government has tried to announce Kimchi as a designated food for Olympic and as fusion food.

 In conclusion, Gimjang culture in Korea was enrolled as a national intangible cultural heritage. Thanks to this action, Koreans can better protect this culture and their forefather’s virtue of collaboration. If their endeavor isn’t only limited to Korea and makes its way abroad, the culture of Gimjang not only will preserve for a long time ,but will also become a lot more diverse.
